Kitchen Myths
A box of baking soda in the fridge or freezer absorbs odors
This is a very clever and successful marketing ploy by the baking soda people, but the fact is that baking soda is very poor at absorbing odors. It seems to make sense, however, so lots of people have spent untold billions of dollars to put boxes of baking soda in their fridge or freezer to no effect. Activated charcoal would work much better but is expensive. Better to wrap your food and clean the fridge once in a while.

And another one:

Many people think that “sushi” is synonymous with raw fish. Not so – the term actually refers to the vinegared rice. This is made by dissolving sugar in vinegar (usually rice vinegar) and tossing with the hot, just-cooked rice. Sushi therefore refers to vinegared rice served with other ingredients which may or may not include fish (which in turn may be raw or cooked). The rice itself is referred to as shari. Raw fish served by itself without the rice is called sashimi.

When you add alcohol to a recipe it all evaporates during cooking so there is none in the final dish

Beautiful Spring weather and a nice bike-ride on my Brompton. I am really enjoying this bicycle. Found more evidence of a Japan-Southwest connection:


Then into the studio, but a nail broke after 30 minutes of playing, just when I was getting somewhere with a new composition…
Later I met Greg Gorman and Arthur Meyerson at Forrest Moses’ house.


Then dinner at Kasasoba. Found out that Arthur Meyerson was very close to Ernst Haas, the first great color photographer – and also the man who shot the first color photos for Life Magazine in 1953. When I went to artschool in the mid-seventies, Ernst Haas was already a legend… Go to Arthur Meyerson’s website, click enter, then Gallery and select Color of Light.

Friday, March 16th

Lunch with David Breeker at CC. We talked about Upaya, the ListeningLounge, digital media in New Mexico, ubiquitous net in Santa Fe and the best movie theater in Santa Fe.

In the early evening I had wine with Greg Gorman at Geronimo. He is in town to teach. I met Greg in 1990 when he photographed me for the covers of “Borrasca” and “Poets & Angels“. He also took the photo for “The Santa Fe Sessions” and these. Of course we talked about photography, Lightroom vs Aperture, his teaching schedule in Mendocino… I think I will go up to Mendo for one of his workshops this Summer or Fall. Sit for some portraits, play guitar, learn something about digital photography, play guitar at a local restaurant in exchange for food ad wine…

Later I tried out this cool GPS setup with my MacBook, a GlobalSat BT-359 Bluetooth GPS Receiver and Google Earth. After installing a couple of free apps, mentioned in the above link, and messing around for a while I got it to work. It worked amazingly well, actually. Very nice!!

History

Last night I’m watching a new docu on JJ Cale called To Tulsa and Back: On Tour with J.J. Cale, and there he is in Boulder Colorado standing below the marquee of the Boulder Theatre (I think) which says (naturally) tonight “JJ Cale” and below that, Feb 6 (I think) “Ottmar Liebert & Luna Negra”…
