I heard many people praise the local food, but I didn’t love it. I thought about this and realized that, while I appreciate tradition, I do prefer new creations. Tradition is a platform from which to jump off, I find. So I decided to find a few restaurants that mixed culinary methods and created new fusions from traditional concepts. I found several such places and really enjoyed the food. The menu pictured here does not do justice to the food served. It lists the ingredients but not the processes, the fermentations for example. I was happy to discover that there is a creative and young energy here that plays with ideas instead of enshrining them into tradition.
