our oil
There are many great olive oil zones, and each zone’s unique geology and climate helps to determine the oil’s characteristics. In Camaiore, the old saying is ‘ci vole la grotta per fare l’olio bono.’ Which means: you need a rocky, tough terrain to make great oil.

Our olives are hand-picked by us, washed, and cold-pressed within 24 hours. Our groves are between 300-460 m above sea level, 8 km from the coast, and protected from sea winds by a series of low hills. This allows our oil to have the decisive taste of Tuscan oils, while at the same time the proximity to the sea gives it a slightly milder taste.

I don’t think it is available in the States, but I brought a bottle with me last October. Wonderful oil. I first tasted it at La Brilla. See HERE and HERE.
